Very small white onions cured in a vinegar brine. They stay firm and crunchy and taste sour, not sweet.

They belong to the Brotzeit, the German cold supper: with cheese, in sausage salad, next to gherkins on the board.

They are called cebollitas en vinagre and sit in the supermarket beside the pickled chillies.

Many Mexican jars are pickled with chilli, often together with carrot and jalapeño.
