Rolled oats in a bowl, flattened and pale

IngredientsFlour & grain

Haferflockenrolled oats

Oats, Avena sativa, are hulled, steamed and rolled flat. The steaming keeps them from going rancid and takes off the bitterness.

In Germany they go into muesli, porridge, oat bread, and into Frikadellen and vegetable patties as a binder.

Kernig oder zartthick or thin

Thick oats are whole rolled grains. They stay chewy in milk for hours.

Thin oats are cut first and rolled thinner. They break down fast, soak up liquid and turn creamy. So thin for porridge and mince, thick for muesli.

In Mexikoin Mexico

Hojuelas de avena, both grades on the shelf. The thick ones are labelled gruesas or enteras, the thin ones finas.

No workaround needed, it is the same ingredient one to one.

Vorsichtwatch out

Avena instantánea is precooked. In muesli it goes to mush within minutes, and in a dough it pulls too much water.

It just about works for porridge, but the taste is flat and the texture pasty.
